Bailey’s Bread Pudding
Ingredients
For the Bread Pudding:
• 6 cups cubed bread (preferably brioche or French bread, slightly stale)
• 1 cup heavy cream
• 1 cup whole milk
• 1/2 cup Bailey’s Irish Cream
• 3 large eggs
• 1/2 cup granulated sugar
• 1/4 cup brown sugar
• 1 tsp vanilla extract
• 1/2 tsp cinnamon
• 1/4 tsp nutmeg
• 1/2 cup chocolate chips (optional)
• 1/2 cup raisins or chopped nuts (optional)
For the Bailey’s Sauce:
• 1/2 cup heavy cream
• 1/4 cup Bailey’s Irish Cream
• 1/4 cup unsalted butter
• 1/2 cup brown sugar
• 1/2 tsp vanilla extract
Instructions
1. Prepare the Bread Pudding:
• Preheat your oven to 350°F (175°C).
• Grease a 9x13-inch baking dish with butter or cooking spray.
• Place the cubed bread in the baking dish.
2. Mix the Custard:
• In a large mixing bowl, whisk together the heavy cream, milk, Bailey’s Irish Cream, eggs, granulated sugar, brown sugar, vanilla, cinnamon, and nutmeg.
• Pour the custard mixture over the bread cubes. Gently press the bread down to soak up the liquid.
• Add chocolate chips or nuts if desired. Let it sit for about 15 minutes to absorb.
3. Bake:
• Bake for 40–45 minutes, or until the pudding is set and golden brown on top.
4. Prepare the Bailey’s Sauce:
• In a saucepan over medium heat, melt the butter and stir in the brown sugar.
• Add the heavy cream and Bailey’s, stirring until smooth.
• Bring to a gentle simmer and cook for 3–4 minutes, then remove from heat. Stir in the vanilla extract.
5. Serve:
• Drizzle the warm Bailey’s sauce over the bread pudding before serving.
• Optional: Top with whipped cream or a scoop of vanilla ice cream.
