spicy Indian naan recipe
Ingredients
For the Dough:
• 2 cups all-purpose flour (maida)
• 1 tsp sugar
• 1 tsp salt
• 1/2 tsp baking powder
• 1/4 tsp baking soda
• 1/2 cup plain yogurt
• 1/4 cup warm milk
• 2 tbsp oil or melted butter
• Water (as needed)
For the Spicy Topping:
• 2 tbsp butter (melted)
• 1-2 green chilies (finely chopped)
• 2 cloves garlic (minced)
• 2 tbsp cilantro (finely chopped)
• 1/2 tsp red chili flakes
• 1/4 tsp cumin seeds (optional)
Instructions
1. Prepare the Dough:
1. In a large bowl, mix flour, sugar, salt, baking powder, and baking soda.
2. Add yogurt, warm milk, and oil. Knead into a soft dough. Add water if needed.
3. Cover the dough with a damp cloth and let it rest for 1-2 hours.
2. Prepare the Spicy Topping:
1. Mix melted butter with garlic, green chilies, red chili flakes, cilantro, and cumin seeds.
3. Roll and Shape the Naan:
1. Divide the dough into 6 equal portions.
2. Roll each portion into an oval or round shape.
4. Cook the Naan:
1. Heat a tawa (griddle) or skillet over medium-high heat.
2. Lightly brush one side of the naan with water and place the wet side down on the hot skillet.
3. Cook until bubbles start forming (about 1-2 minutes).
5. Add the Spicy Topping:
1. Flip the naan and immediately brush the spicy butter mixture on the cooked side.
2. Cook for another 1-2 minutes until golden brown spots appear.
6. Final Touch:
• Optional: Place naan directly over an open flame for a few seconds to char the edges slightly.
• Brush with more butter if desired and serve hot!
