Spicy Chicken Curry Delight

Ingredients:
- 800g of chicken breast, diced
- 2 medium onions, finely chopped
- 4 cloves of garlic, minced
- 1 inch ginger, grated
- 2 tablespoons of curry powder
- 400ml of coconut milk
- 2 tablespoons of vegetable oil
- 1 tablespoon of tomato paste
- Salt to taste
- Chopped cilantro for garnish

Instructions:
- Heat the vegetable oil in a large pan over medium heat.
- Add the chopped onions and sauté until they are translucent.
- Stir in the minced garlic and grated ginger, cooking for an additional minute.
- Add the diced chicken breast to the pan and cook until it is browned on all sides.
- Sprinkle the curry powder over the chicken and mix well to coat the meat.
- Stir in the tomato paste and mix thoroughly with the other ingredients.
- Pour in the coconut milk and bring the mixture to a simmer.
- Season with salt to taste and let it cook for about 10 minutes until the chicken is cooked through and the sauce has thickened.
- Remove from heat and garnish with chopped cilantro before serving.
