Ingredients:

  • 500g of pork tenderloin, cut into bite-sized pieces
  • 2 tablespoons of vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 2 tablespoons of curry powder
  • 1 teaspoon of turmeric
  • 1 teaspoon of cumin
  • 1 can (400ml) of coconut milk
  • 1 tablespoon of soy sauce
  • Salt to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Add the chopped onion and sauté for 2-3 minutes until translucent.
  • Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  • Add the pork pieces to the skillet, browning them on all sides for about 5 minutes.
  • Sprinkle in the curry powder, turmeric, and cumin, stirring well to coat the pork evenly.
  • Pour in the coconut milk and soy sauce, bringing the mixture to a simmer.
  • Season with salt to taste, allowing it to cook for an additional 10-12 minutes until the pork is tender and the sauce thickens slightly.
  • Remove from heat and let it sit for a couple of minutes before serving.
  • Garnish with fresh cilantro if desired and serve hot with rice or naan.
