Ingredients:
- 500g of pork tenderloin, cut into bite-sized pieces
- 2 tablespoons of vegetable oil
- 1 large onion, finely chopped
- 4 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 2 tablespoons of curry powder
- 1 teaspoon of turmeric
- 1 teaspoon of cumin
- 1 can (400ml) of coconut milk
- 1 tablespoon of soy sauce
- Salt to taste
- Fresh cilantro for garnish (optional)

Instructions:
- Heat the vegetable oil in a large skillet over medium-high heat.
- Add the chopped onion and sauté for 2-3 minutes until translucent.
- Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
- Add the pork pieces to the skillet, browning them on all sides for about 5 minutes.
- Sprinkle in the curry powder, turmeric, and cumin, stirring well to coat the pork evenly.
- Pour in the coconut milk and soy sauce, bringing the mixture to a simmer.
- Season with salt to taste, allowing it to cook for an additional 10-12 minutes until the pork is tender and the sauce thickens slightly.
- Remove from heat and let it sit for a couple of minutes before serving.
- Garnish with fresh cilantro if desired and serve hot with rice or naan.
