Ingredients:
- 200g of bell peppers
- 150g of zucchini
- 100g of carrots
- 100g of cherry tomatoes
- 50g of fresh herbs (basil, parsley)
- 2 tbsp of olive oil
- Salt and pepper to taste
- 100g of fresh lettuce
Kitchen Tools Needed:
- Oven
- Baking tray
- Mixing bowl
- Spatula
- Knife
- Cutting board
Instructions:
- Preheat the oven to 200°C (392°F).
- Chop the bell peppers, zucchini, carrots, and cherry tomatoes into bite-sized pieces and place them in a mixing bowl.
- Drizzle the olive oil over the chopped vegetables and season with salt and pepper.
- Mix the ingredients well to ensure all the vegetables are coated evenly with oil and seasoning.
- Spread the vegetables evenly on a baking tray.
- Roast in the preheated oven for about 10-12 minutes or until they are tender and slightly caramelized.
- While the vegetables are roasting, wash the fresh lettuce and tear it into pieces.
- Once the vegetables are done, remove them from the oven and let them cool slightly.
- To serve, place the fresh lettuce on a plate and top it with the roasted vegetable medley. Garnish with freshly chopped herbs.
