Ingredients:

  • 200g of bell peppers
  • 150g of zucchini
  • 100g of carrots
  • 100g of cherry tomatoes
  • 50g of fresh herbs (basil, parsley)
  • 2 tbsp of olive oil
  • Salt and pepper to taste
  • 100g of fresh lettuce

Kitchen Tools Needed:

  • Oven
  • Baking tray
  • Mixing bowl
  • Spatula
  • Knife
  • Cutting board

Instructions:

  • Preheat the oven to 200°C (392°F).
  • Chop the bell peppers, zucchini, carrots, and cherry tomatoes into bite-sized pieces and place them in a mixing bowl.
  • Drizzle the olive oil over the chopped vegetables and season with salt and pepper.
  • Mix the ingredients well to ensure all the vegetables are coated evenly with oil and seasoning.
  • Spread the vegetables evenly on a baking tray.
  • Roast in the preheated oven for about 10-12 minutes or until they are tender and slightly caramelized.
  • While the vegetables are roasting, wash the fresh lettuce and tear it into pieces.
  • Once the vegetables are done, remove them from the oven and let them cool slightly.
  • To serve, place the fresh lettuce on a plate and top it with the roasted vegetable medley. Garnish with freshly chopped herbs.
