Nepalese Mutton Curry
Ingredients:
• 500g mutton (bone-in), cut into pieces
• 2 tablespoons mustard oil (or any cooking oil)
• 1 large onion, finely sliced
• 1 large tomato, chopped
• 1 tablespoon garlic paste
• 1 tablespoon ginger paste
• 2-3 dried red chilies
• 1 teaspoon turmeric powder
• 1 teaspoon cumin powder
• 1 teaspoon coriander powder
• 1 teaspoon red chili powder
• 1 teaspoon garam masala
• 1 bay leaf
• 2-3 cardamom pods
• 2-3 cloves
• 1-inch cinnamon stick
• Salt to taste
• Fresh coriander leaves, chopped (for garnish)
Instructions:
1. Marinate the Mutton:
• Mix the mutton with turmeric, cumin, coriander powder, red chili powder, and a pinch of salt.
• Let it marinate for at least 30 minutes.
2. Heat Oil and Fry Spices:
• Heat mustard oil in a large pot until it starts smoking slightly.
• Reduce the heat and add bay leaf, cardamom, cloves, and cinnamon. Sauté for 30 seconds until aromatic.
3. Cook the Onions and Paste:
• Add sliced onions and fry until golden brown.
• Stir in garlic and ginger paste. Fry for 1-2 minutes until the raw smell disappears.
4. Add Tomatoes and Spices:
• Add chopped tomatoes and cook until they soften.
• Add cumin, coriander, red chili powder, and salt. Stir well and cook until oil starts separating.
5. Cook the Mutton:
• Add the marinated mutton and mix thoroughly with the masala.
• Fry the mutton for 10-15 minutes, stirring occasionally.
6. Simmer the Curry:
• Pour in enough water to cover the mutton and bring it to a boil.
• Lower the heat, cover, and simmer for 45 minutes to 1 hour until the meat is tender. Stir occasionally and add water if needed.
7. Add Garam Masala and Final Touches:
• Once the mutton is cooked, add garam masala and stir well. Simmer for another 5 minutes.
8. Garnish and Serve:
• Garnish with freshly chopped coriander leaves.
• Serve hot with rice or roti.
Tips:
• For extra flavor, you can add potatoes along with the mutton.
• Adjust the spice level to suit your taste.
• Mustard oil gives an authentic flavor, but you can substitute it with any cooking oil.
