Ingredients:
- 5 slices of whole grain bread
- 2 tablespoons of olive oil
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup of cherry tomatoes, halved
- 1 cup of spinach, chopped
- 5 large eggs
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of paprika
- 1/4 cup of grated Parmesan cheese

Instructions:
- Preheat the oven to 200°C (400°F).
- Arrange the slices of whole grain bread on a baking tray.
- In a mixing bowl, combine the diced bell pepper, zucchini, cherry tomatoes, and spinach. Add olive oil, salt, black pepper, and paprika. Toss well to coat the vegetables with the seasoning.
- Spread the vegetable mixture evenly over the bread slices.
- Make a small indentation in the center of each slice and crack an egg into the space.
- Sprinkle grated Parmesan cheese on top of the eggs and vegetables on each slice.
- Bake in the preheated oven for about 15-20 minutes or until the eggs are set to your desired consistency.
- Remove from oven and let cool slightly before serving.
