Ingredients:

  • 5 slices of whole grain bread
  • 2 tablespoons of olive oil
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup of cherry tomatoes, halved
  • 1 cup of spinach, chopped
  • 5 large eggs
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 teaspoon of paprika
  • 1/4 cup of grated Parmesan cheese

Kitchen Tools Needed:

  • Baking tray
  • Mixing bowl

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Arrange the slices of whole grain bread on a baking tray.
  • In a mixing bowl, combine the diced bell pepper, zucchini, cherry tomatoes, and spinach. Add olive oil, salt, black pepper, and paprika. Toss well to coat the vegetables with the seasoning.
  • Spread the vegetable mixture evenly over the bread slices.
  • Make a small indentation in the center of each slice and crack an egg into the space.
  • Sprinkle grated Parmesan cheese on top of the eggs and vegetables on each slice.
  • Bake in the preheated oven for about 15-20 minutes or until the eggs are set to your desired consistency.
  • Remove from oven and let cool slightly before serving.
